This salad is a great way to start the day with a healthy dose of leafy greens, protein, and carbohydrates. Not only will you have energy throughout the morning but you will also have the brain power you need to take on the challenges of the day.
MIA’S BREAKFAST SALAD
SERVES: 2
INGREDIENTS:
3- cups Power Greens
¾- cup cherry tomatoes (halved)
1- avocado (diced)
3/4- cup mixed berries (such as blueberries, strawberries and blackberries)
1/2- cup chopped nuts (almonds, walnuts, etc…)
Balsamic Glaze
1- lemon juiced
Extra Virgin Olive Oil
2- eggs
2- slices turkey bacon
1- slice of Mulitseed Sour Dough Toast
INSTRUCTIONS:
Step 1- Drizzle olive oil and salt over the sour dough bread slices and place in the oven to toast. Remove when done.
Step 2- Grab two bowls and divide the power greens into each. Add tomatoes, avocado, berries, nuts. Drizzle with olive oil, balsamic glaze, lemon juice and salt to taste and mix.
Step 3- Heat a pan with oil, slice the turkey bacon and saute until desired doneness is reached. Remove from pan and divide into salad bowls.
Step 4- Crack your eggs into the skillet. Cook to desired doneness. Once ready place 1 egg on top each salad and enjoy!
Notes: To make this recipe vegan omit the turkey bacon and add sautéed tofu or a tofu scramble. Or simply eat as is☺
